Philosophy

Our kitchen has its roots in the peasant culture when the passing of time was marked by the rhythm of nature.  Plates were created with simple, genuine ingredients, fruit of  hard daily labour and of the fertile earth.

Ours is an austere but generous land, capable of producing quality meat, milk and other excellent products such as mushrooms, oil, wine, and that authentic king of the table, His Highness ‘The Truffle’.

Merit goes to our chefs who have revived traditional recipes.  Paying great attention to their choice of raw products, and adding a touch of talent and fantasy, they create delicious dishes worthy of any table.
